What if the best part of the wine never made it into the bottle?

Every harvest, California's vineyards produce more fresh grape juice than they can turn into wine. We take that juice — sweet, ripe, bursting with flavor — and slow-cook it for 48 hours until it becomes something extraordinary.

What is Saba?

The Italians have been making this for 3,000 years. We brought it to California.

Saba is the ancestor of balsamic vinegar — made simply by reducing fresh grape juice over low heat until it becomes thick, glossy, and deeply complex. Unlike balsamic, saba has no vinegar, no fermentation, no aging. It's pure concentrated grape — sweeter, smoother, and more versatile. Pour it on cheese. Drizzle it on ice cream. Finish a pizza. Glaze a steak. The Italians knew. Now you will too.

The Process

48 hours. Nothing else.

Harvest
California wine grapes picked at peak ripeness from premier growing regions.

Press
Fresh grape juice extracted and kept pure. No fermentation, no alteration. Just sweet must.

Reduce
Slow-cooked for 48 hours. The must reduces to one-third its volume — thick, glossy, complex.

Bottle
Bottled warm. No preservatives needed — natural concentration ensures a 5+ year shelf life.
